Stuffed Zucchini (Green Squash)

Ingredientes

  • 6 x zucchini's approximately 7 inches long,
  • 5 x inches in circumference
  • 2 tsp butter or possibly margarine
  • 1 med onion (use more if you love onions)
  •     garlic, garlic pwdr, salt, and pepper (to taste)
  •     shredded mozzarella cheese
  •     (or possibly any preferred cheese)

Direcciones

  1. Wash the zucchinis in cold water and cut off the stem area. Using a sharp knife, cut a lengthwise "V" shaped slice out of the top. It should be wide sufficient to easily put a spoon in, to scoop out the
  2. "meat" of the zucchini. Scoop out the inside of the zucchini, and do not forget to scoop it off the slice you cut out. Put it in a bowl for use later.
  3. Dice 1 medium onion. In a saute/fry' pan, heat 1-2 tsp butter or possibly margarine over medium heat. Cook the onions until transparent. Don't brown. Add in garlic or possibly garlic pwdr, salt and pepper, as you wish.
  4. Add in the zucchini "meat" and cook on low, until soft and tender. (about 10 min) Turn off the heat under the pan.
  5. While the mix is cooking, place the zucchini shells next to each other on a baking sheet. For the grill, place on individual foil sheetsScoop out some of the mix, and place it back into the zucchini shell. Sprinkle with shredded mozzarella cheese. Put the top of each zucchini back on.
  6. Bake for 35 min at 325 degrees, Fahrenheit, till the zucchini is tender.
  7. If grilling, wrap individually and mix in ends of foil. Cook on the outside perimeter of the grill for 15-20 min, rotating them occasionally. Check it once or possibly twice for tenderness. Enjoy this summer treat.
  8. Variation: Add in diced, cooked chicken or possibly grnd turkey or possibly beef to the zucchini mix, for an unusual main course.
