This month we are going to Samoa the beautiful island country in the South Pacific ocean for #Food of the World event. I have tried these delicious fluffy and coconut milk soaked Pani popos and this super simple banana pudding, Poi from Samoa.

Today's recipe is a Samoan banana-tapioca soup called Suafa'i. Overripe bananas are cooked down along with coconut milk and tapioca. It is supposed to be a soup but I cooked it down to a pudding consistency. This dish is not really photogenic, so I added some chocolate chips to make it a little appetizing in the photos :-) Skip the chocolate if you want a more traditional Samoan dessert.

This dish is for all banana fans, it tastes sweet and banana-ey. I didn't add any additional sweetener because the sweetness from the banana was enough for me. The coconut milk adds creaminess to the dish and gives a subtle flavor in the background.

In a small saucepan, combine bananas and water. Bring the mixture to a boil, lower the heat and simmer till bananas are cooked through. Mash it with the back of the spoon or a potato masher to make a smooth mixture.

Add the tapioca and mix well to combine.

Next add the coconut milk and simmer the mixture until the tapioca are cooked through, stirring frequently to prevent sticking to the bottom, about 15~20 minutes. Tapioca should turn completely translucent.

Let the pudding cool completely before serving.
