Before I share with you how to make this colorful and delectable scallop dish, I'd like to introduce you to Chef Todd Fisher-- who is the creator of this recipe. Just look at that smile! Chef Todd and I share the same home turf-- the beautiful Monterey Peninsula (California). Todd and I have crossed paths over the last decade via our church, friends, local food events and I've been a frequent customer at his restaurants over the years. .%20Todd%20and%20I%20have%20crossed%20paths%20over%20the%20last%20decade%20via%20our%20church,%20friends,%20local%20food%20events%20and%20I've%20been%20a%20frequent%20customer%20at%20his%20restaurants%20over%20the%20years.%20%20He's%20a%20genuinely%20friendly%20kind%20of%20family%20man,%20with%20a%20fun%20and%20outgoing%20personality...%3C/p%3E%3Cp%3E...and,%20he%20loves%20to%20be%20photographed!%20%20Chef%20Todd%20was%20one%20of%20the%20presenters%20for%20%22Fresh%20Express%22%20at%20the%20Foodbuzz%20Blogger%20Festival%20in%20San%20Francisco.%20%20He%20uses%20local%20and%20fresh%20ingredients%20from%20our%20Salinas%20Valley%20and%20the%20Monterey%20area.%20Here,%20he%20is%20giving%20a%20generous%20serving%20of%20an%20Herb%20Salad%20with%20Toasted%20Quinoa%20and%20Smoked%20Pecans%20in%20a%20Cranberry%20Vinaigrette.%20%20%20I'm%20a%20fan%20of%20%20Todd's%20culinary%20creations,%20because%20he%20really%20thinks%20outside%20the%20box.%20%20%20What%20really%20stands%20out%20about%20Todd%20is%20that%20he%20has%20both%20passion%20and%20a%20talent%20for%20cooking--which%20is%20why%20he%20is%20quickly%20gaining%20celebrity%20status%20in%20the%20culinary%20world.%20%20%20After%20a%20long%20and%20successful%20run%20as%20a%20partner%20in%20a%20local%20restaurant,%20Chef%20Todd%20has%20moved%20into%20a%20new%20direction--%20while%20keeping%20busy%20with%20food%20events%20all%20over%20the%20country,%20and%20balancing%20time%20with%20his%20wife%20and%20children.%20%20In%20a%20quiet%20little%20Monterey%20Peninsula%20seaside%20community%20called%20'Sand%20City',%20Todd%20has%20opened%20his%20newest%20venture%20called%20%22The%20Kitchen%22.Upstairs,%20there's%20a%20loft%20with%20a%20dining%20area%20where%20customers%20hire%20Chef%20Todd%20to%20cater%20their%20dinner%20parties.%20%20He%20also%20hosts%20dinner%20parties%20with%20a%20prix%20fixe%20menu,%20that%20anyone%20can%20attend.%20%20He's%20a%20very%20busy%20man,%20but%20he%20also%20sets%20time%20aside%20to%20offer%20cooking%20classes%20to%20aspiring%20home%20chefs%20(like%20me).%20%20%20When%20Todd%20announced%20that%20he%20would%20be%20teaching%20a%20'Valentine's%20Tribute,%20Sensual%20Dinner%20Three-Hour%20Cooking%20Class'--%20and%20I%20saw%20Lobster%20Bisque%20and%20Succulent%20Scallops%20on%20the%20menu--%20I%20quickly%20paid%20my%20$75.00%20and%20I%20charged%20my%20camera%20battery.%3C/p%3E%3Cp%3EAs%20we%20arrived%20for%20the%20class,%20we%20were%20warmly%20greeted%20and%20presented%20with%20mimosas.%20%20We%20began%20by%20making%20the%20seafood%20bisque%20(that%20I%20will%20present%20on%20a%20later%20post)--%20the%20class%20was%20very%20much%20a%20%22hands%20on%22%20experience.%3C/p%3E%3Cp%3EWe%20had%20three%20hours%20to%20learn%20how%20to%20prepare%20six%20dishes,%20so%20Todd%20jumped%20in%20and%20prepared%20the%20shaved%20asparagus%20salad.%20%20I'm%20a%20big%20fan%20of%20roasted%20asparagus,%20but%20I%20never%20thought%20to%20shave%20uncooked%20asparagus,%20with%20a%20vegetable%20peeler,%20and%20to%20serve%20it%20with%20a%20vinaigrette!%3C/p%3E%3Cp%3EThe%20vinaigrette%20was%20made%20with%20champagne%20vinegar,%20a%20shallot,%20orange%20zest,%20Dijon%20mustard,%20sea%20salt,%20black%20pepper,%20Italian%20parsley%20and%20olive%20oil--%20very%20simple,%20very%20delicious.%20%20He%20set%20that%20aside...%3C/p%3E%3Cp%3ENext,%20Todd%20made%20the%20Carrot,%20Orange%20&%20Cardamon%20Sauce.%3C/p%3E%3Cp%3ETodd%20showed%20how%20important%20it%20is%20to%20dry%20the%20scallops%20really%20well,%20(he%20seasoned%20them%20with%20just%20salt%20and%20pepper)--%20and%20to%20get%20the%20pan%20really%20hot;%20next%20he%20adds%20olive%20oil%20and%20a%20pat%20of%20butter.%20%20In%20a%20matter%20of%20about%203%20minutes,%20he%20had%20a%20platter%20of%20these%20gorgeous%20scallops:%3C/p%3E%3Cp%3EI%20greedily%20selfishly%20wished%20that%20everyone%20had%20an%20allergy%20to%20these,%20so%20I%20could%20more.%20I%20adore%20scallops.%20I%20truly%20do.%20So,%20now%20it's%20time%20to%20taste.%20Chef%20Todd%20shows%20us%20how%20the%20pro's%20do%20it--%20Begin%20with%20two%20scallops...%3C/p%3E%3Cp%3E...spoon%20some%20of%20that%20beautiful%20carrot,%20orange,%20cardamon%20sauce.%20Do%20I%20hear%20an%20%22ooooh%22?%20%20Now%20top%20it%20with%20some%20of%20the%20shaved%20asparagus%20salad.%20%20Do%20I%20hear%20an%20%22ahhhhhhhhhh%22?%3C/p%3E%3Cp%3ELadies%20and%20Gentlemen,%20I%20present%20to%20you%20perfectly%20succulent%20scallops,%20ala%20Chef%20Todd%20Fisher.%20%20They%20are%20tender.%20%20They%20are%20so%20good!%20Besides%20the%20sauce%20being%20such%20a%20beautiful%20color,%20it's%20light--%20the%20balance%20of%20orange%20and%20cardamon%20is%20perfect%20with%20the%20carrot%20juice.%20%20This%20gets%20about%2010%20O-M-G's.%20%20I%20would%20have%20never%20thought%20of%20piling%20the%20asparagus%20salad%20on%20top,%20but%20it%20works.%20%20There's%20a%20gentle%20bite%20from%20the%20vinaigrette,%20that%20balances%20out%20the%20sweetness%20of%20the%20scallops%20and%20the%20carrot-orange-cardamon%
