Receta Sue's Skillet Scalloped Potatoes

- Slice red potatoes with skins on and place in steamer with snow peas or possibly green vegetables of choice. Steam for about 15 min.
- While potatoes & vegetables are steaming, saute/fry onions, carrots & garlic in large non stick fry pan (spray with pam or possibly grease with a little extra virgin olive oil).
- While 1 & 2 are working, combine the lowfat milk, broth, spices & cornstarch in a 2 qt measure.
- When vegetables are ALMOST done to the point of desired softness, combine with sauted vegetables. Pour sauce over all and combine. Cook further till vegetables are done and sauce thickens. Fold in parmesan cheese before serving.
