- Preheat oven to 350 F.
- Line cookie sheets with parchment paper. Set aside.
- In a medium bowl, mix together flour, baking soda, salt, cinnamon, cardamom, cloves and ginger. Set flour mixture aside.
- In a large bowl, at medium-high speed, beat shortening, sugar until smooth. (2 minutes)
- Add in 2 Tablespoons of milk.
- Scrape down sides of bowl.
- Beat in the egg and then the molasses until well blended.
- At low speed, gradually add in the flour mixture until just blended.
- (Do Not Over Mix)
- (If dough is too wet to roll, mix in 1 to 2 Tablespoons of flour)
- Using a flatware teaspoon, scoop and roll dough into 1 inch balls (.45 ounce)
- Place balls on cookie sheets about 2 inches apart.
- Slightly press down on top of ball.
- Bake for 6-1/2 minutes.
- For even browning, rotate the cookie sheet half way through baking cycle.
- Remove cookies from oven and cool, on cookie sheets for 2 minutes.
- Move cookies, on parchment paper, to wire racks for complete cooling.
- If desired, after baking and cooling, sprinkle with confectioners’ sugar.
- Makes 5 dozen (60) 2-1/2 inch cookies.
