Receta Sugar & Spice Walnuts
by Anne

Another month has flown by, and so has another year. It’s time for the last recipe redux of the 2014 ~ Redux number 42! Yes that’s right, the Recipe Redux has been around for 42 months. The theme for this month’s Recipe Redux is to celebrate their 42 month anniversary by grabbing our nearest cookbook and ReDux the recipe on either page 42 or 142.

I quickly thought of a few cookbooks that I could use and then I remembered this one. . .

It’s nothing fancy, just a cookbook from a local PTA that my father gave to me many years ago. As you can see, it’s pretty worn and torn, literally! It even survived an attack by my dog when she was a puppy. I still use it to inspire me when I’m looking for something different. I think “local” cookbooks often have the best tasting tried and true home cooked recipes in them; even though some may need to be tweaked to make them more healthy.

I opened to page 42 which has two recipes; but neither of them were appealing to me. . .

So off to page 142 I went and found a recipe for sugared nuts, a very fitting recipe for this time of year, it even mentioned that the nuts make a good Christmas gift!

The ingredients are simple: egg whites, sugar, butter, walnuts, salt and butter.

As you can see from my notes, I substituted maple syrup for sugar, coconut oil for butter, and I added a little bit of heat.

Here’s my recipe. . .
