- Combine first 4 ingredients in a large bowl. Cover and refrigerate1 hour.
- For Blueberry Vinaigrette: Whisk together first 5 ingredients. Gradually whisk in oil till blended. Chill leftover vinaigrette up to 2 weeks. (Makes 1 1/2 c.)
- Drizzle 1/3 c. Blueberry Vinaigrette over blueberry mix, tossing to coat. Sprinkle with slivered almonds, if you like.
- This recipe yields 4 servings.
- For Summer Fruit Salad With Chicken and Blueberry Vinaigrette: Add in 2 c. minced cooked chicken.
