.%20So%20that%20means%20for%20the%20next%202%20months%20we'll%20be%20having%20lunch%20together:)%20That%20makes%20me%20smile.%20I%20miss%20the%20little%20guy%20when%20he's%20not%20here!%20But%20for%20summer%20meals,%20I%20try%20to%20just%20have%20stuff%20on%20hand%20that%20we%20both%20like,%20are%20quick,%20easy%20and%20%22light%22%20since%20neither%20of%20us%20enjoy%20heavy%20meals%20when%20it's%20too%20hot.%20(And%20no%20Mommy%20isn't%20eating%20Lunchables%20all%20summer!)%20So%20I'm%20always%20on%20the%20look%20out%20for%20thins%20that%20meet%20the%20bill,%20and%20the%20May%20issues%20of%20Rachael%20Ray%20had%202%20recipes%20in%20it%20I%20think%20will%20be%20perfect.%20The%20first%20is%20more%20of%20a%20%22snack%22%20type,%20but%20we'll%20be%20using%20it%20as%20a%20veggie%20side%20(just%20b/c%20lunch%20is%20quick,%20doesn't%20mean%20we%20don't%20try%20to%20have%20balanced)%20and%20the%20other%20is%20a%20cool%20sandwich%20I%20know%20Alex%20will%20love.%20(Everything%20is%20more%20fun%20when%20it's%20rolled%20up!)%20Plus%20they%20both%20will%20be%20great%20for%20when%20we%20decide%20to%20go%20on%20a%20%22Mommy%20&%20Monkey%22%20picnic--one%20of%20our%20favorite%20summer%20time%20activities.%20Ah....can't%20wait%20until%20next%20week:)%3C/p%3E%3Cp%3EStir%20cucumber%20into%20cream%20cheese,%20spread%20on%20tortillas,%20layer%20w/%20turkey%20slices%20and%20roll%20up.%20Cut%20into%20pieces.%3C/p%3E%3Cp%3ECucumber%3C/p%3E){kind=link}
