.%20They%20were%20sweet%20and%20delicious%20that%20I%20would%20just%20walk%20through%20the%20garden%20and%20eat%20them%20off%20the%20plant!%20But,%20some%20did%20make%20it%20into%20my%20kitchen%20and%20I%20managed%20to%20whip%20up%20some%20pretty%20good%20meals%20also.%3C/p%3E%3Cp%3EThe%20one%20I%20am%20sharing%20with%20you%20today%20is%20a%20nice%20summery%20risotto.%20You%20will%20notice%20that%20the%20peas%20are%20stirred%20in%20almost%20at%20the%20last%20minute.%20You%20want%20them%20to%20still%20be%20fresh%20and%20crisp%20in%20both%20texture%20and%20taste.%20The%20peas%20are%20accented%20with%20one%20of%20their%20favorite%20pairing%20herbs--%20mint%20(also%20from%20the%20garden).%3C/p%3E%3Cp%3EIf%20you%20don't%20have%20fresh%20peas,%20don't%20worry.%20This%20dish%20can%20be%20made%20with%20frozen%20peas%20and%20it%20tastes%20amazing%20as%20well.%20But%20I%20have%20to%20say,%20there%20is%20something%20extremely%20rewarding%20about%20growing%20your%20veg%20and%20then%20eating%20it!%3C/p%3E%3Cp%3ESummer%20Risotto%20with%20Peas,%20Mint,%20Lemon%20and%20Parmesan%3C/p%3E%3Cp%3EServes%202%20as%20main,%204%20as%20starter%20or%20side%20dish%3C/p%3E%3Cp%3E*For%20the%20peas,%20if%20you%20are%20fortunate%20to%20have%20any%20peas%20from%20the%20garden,%20use%20them.%20If%20you%20have%20peas%20with%20edible%20pods%20like%20snap%20or%20snow%20peas,%20just%20cut%20them%20up.%20Otherwise,%20you%20can%20use%20frozen%20peas.%3C/p%3E%3Cp%3EIn%20a%20large%20saucepan,%20heat%20the%20olive%20oil.%20Sautee%20the%20garlic%20and%20onion%20for%20a%20few%20minutes%20until%20they%20just%20start%20to%20soften.%20Add%20the%20rice%20and%20cook%20for%20a%20few%20minutes.%20Then,%20add%20a%20half%20cup%20of%20broth.%20Stir%20constantly%20until%20the%20broth%20is%20absorbed.%20Then%20add%20another%20half%20cup%20of%20broth,%20stir%20until%20absorbed%20and%20continue%20in%20this%20fashion%20until%20all%20the%20broth%20has%20been%20absorbed%20by%20the%20rice%20and%20the%20rice%20is%20cooked.%20Stir%20in%20the%20peas,%20parmesan,%20lemon%20juice,%20zest%20and%20mint.%20%20The%20risotto%20should%20be%20nice%20and%20creamy,%20but%20if%20it%20seems%20dry,%20add%20the%20extra%201/4%20cup%20of%20broth.%20Cook%20and%20stir%20for%20another%20few%20minutes,%20until%20the%20peas%20are%20just%20cooked%20(or%20warmed%20through%20if%20you%20are%20using%20frozen%20peas).%20Season%20to%20taste%20with%20salt%20and%20pepper%3C/p%3E){kind=link}
