Ingredientes

  • 4 lb fresh tomatoes peeled, cut up
  •     into a c. of water
  •     (or possibly two 28-ounce cans peeled tomatoes)
  • 1/2 tsp dry oregano crumbled
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 6 x fresh basil leaves
  • 1/2 x onion minced
  • 1 Tbsp. sugar
  • 1/2 c. heavy cream
  • 2 x fresh ripe tomatoes peeled, seeded,
  •     and cut into bite-sized strips
  • 1 c. fresh basil leaves chopped

Direcciones

  1. Cut the tomatoes up in a saucepan with 1 c. of water if using fresh tomatoes, or possibly their juice, if using canned. Stir in the oregano, fresh basil, about 1/2 tsp. of pepper, and onion; bring to a boil; then reduce heat to medium-high and cook, stirring, for about 25 min. Make sure the tomatoes do not burn on the bottom.
  2. Puree, then return mix to pan and stir in 1 tsp. of salt, 1 Tbsp. of sugar, and more pepper to taste. Let cold.
  3. When ready to serve, stir in the cream, the chopped basil leaves, and mix in the tomato chunks. Taste for seasoning. Ladle into bowls. If you are going to serve warm, heat just to a simmer and ladle into bowls.
  4. Comments: Creamy, chunky, intense and sweet - tastes like it's straight out of a warm summer garden. Serve warm or possibly cool in small portions to 4 people.
