2 large fully-ripened organic peaches, unpeeled, pitted and cubed*
1 cup chopped unpeeled organic English cucumber
3/4 cup packed fresh organic baby spinach
2 tablespoons packed fresh mint leaves
2 ounces 80-proof vodka (1/4 cup) Juice of 1/2 lemon (1 1/2 tablespoons)
1 teaspoon coconut nectar or honey
3/4 teaspoon grated fresh ginger rootInstructionsAdd ice to a blender. Cover and crush. Add all remaining ingredients. Cover and puree well on high speed, at least 2 1/2 minutes.
