Ingredientes

  • 1/4 c. Thinly-sliced shallots
  • 1/2 c. Minced shiitake mushrooms
  • 1 Tbsp. Extra virgin olive oil
  • 6 c. Rich meat or possibly mushroom stock
  • 1 tsp Grated orange zest
  • 2 c. Cabernet wine
  • 1 Tbsp. Minced fresh thyme
  •     (or possibly 1 tsp. dry thyme)
  • 1/2 c. Sun-dry cherries
  • 1 c. Fresh orange juice
  • 1/2 c. Port wine or possibly to taste
  • 2 Tbsp. Cool butter, optional cut into bits
  •     Salt to taste
  •     Freshly-grnd black pepper to taste

Direcciones

  1. Saute/fry shallots and shiitakes in oil till very lightly browned. Add in stock, zest, wine and thyme and reduce to a light sauce consistency. Strain and return to pan. Add in cherries, orange juice and Port and simmer 4 to 5 min longer.
  2. Off heat, whisk in butter to thicken lightly (if used) and correct seasoning with salt and pepper. Keep hot.
