Sun-Dried Tomato Aioli

Delicious on any sandwich, and with the asparagus scramble from Cafe Flora

I use Veganaise; the original recipe calls for mayo but I'm not a purist when the taste seems the same to me. If you are, use mayo.

Ingredientes

  • 1 oz. sun-dried tomatoes (8-10 tomatoes)
  • 2 cloves garlic, minced
  • 2t lemon juice
  • 1/4 C Veganaise
  • Salt and freshly ground pepper

Direcciones

  1. In a small bowl, cover the tomatoes with 1 cup of hot water and soak for about 30 minutes until soft.
  2. Drain (reserving soaking water) and squeeze out excess water
  3. Finely chop tomatoes
  4. Place tomatoes in blender or food processor with remaining ingredients and process until smooth, adding soaking water as needed for proper smooth texture..
  5. Scrape down sides of container and process again.
  6. Season to taste with salt and pepper.
