%20have%20kept%20me%20away%20from%20opening%20the%20refrigerator%20door%20and%20taking%20stock.%20Apples%20are%20one%20fruit%20my%20son%20is%20happy%20to%20eat%20everyday,%20so%20as%20soon%20as%20I%20open%20the%20online%20ordering%20website,%20I%20first%20add%20apples%20to%20my%20cart,%20and%20that%20has%20made%20one%20hell%20of%20a%20heavy%20apple%20cart.%3C/p%3E%3Cp%3EFriday%20+%20too%20many%20apples,%20logical%20conclusion%20is%20to%20bake%20apple%20cake,%20right?!%3C/p%3E%3Cp%3ESo%20what%20if%20there%20is%20no%20'fall'%20in%20Bangalore,%20as%20an%20internet%20citizen,%20I%20am%20allowed%20the%20right%20to%20enjoy%20fall%20by%20way%20of%20my%20recipes,%20and%20apple%20cake%20is%20the%20perfect%20foil%20for%20the%20start%20of%20fall.%20Foil..fall...sorry%20that%20was%20totally%20unintended%20:)%3C/p%3E%3Cp%3EThe%20first%20apple%20cake%20I%20tried%20baking%20was%20over%2010%20years%20ago.%20It%20was%20a%20Paula%20Deen%20recipe%20and%20for%20those%20who%20don't%20know%20Paula%20Deen,%20her%20recipes%20are%20(in)famous%20for%20having%20minimum%202%20sticks%20butter%20(in%20those%20days).%20The%20icing%20on%20the%20cake%20(pun%20intended%20this%20time)%20was%20that%20it%20also%20had%201%20whole%20cup%20sugar%20for%20the%20glaze%20alone.%20I'm%20pushing%2040%20and%20recipes%20with%20such%20a%20huge%20degree%20of%20'indulgence'%20make%20me%20close%20the%20browsing%20window%20before%20you%20can%20blink%20an%20eyelid.%3C/p%3E%3Cp%3EWhile%20browsing%20for%20healthier%20apple%20cake%20recipes,%20I%20came%20across%20a%20vegan%20one,%20which%20seemed%20to%20fulfil%20my%20criteria.%20I%20also%20wanted%20to%20test%20out%20Phalada%20Pure%20and%20Sure's%20Organic%20Coconut%20Sugar%20(Disclaimer:%20Client)%20in%20a%20baking%20recipe.Coconut%20sugar%20is%20derived%20from%20the%20sap%20of%20the%20coconut%20flowers,%20and%20is%20said%20to%20have%20a%20lower%20glycemic%20index%20than%20sugar.%20It%20is%20much%20less%20processed%20than%20sugar%20is,staying%20close%20to%20its%20natural%20form,%20and%20therefore%20lesser%20chemicals%20get%20into%20it.%20I%20have%20used%20this%20in%20my%20tea%20and%20coffee%20and%20the%20flavour%20is%20quite%20like%20sugar%20but%20with%20a%20caramelly%20taste.%3C/p%3E%3Cp%3EEarlier%20this%20week,%20I%20came%20across%20a%20story%20on%20apple%20cake%20in%20the%20WSJ%20(who%20would%20have%20thought,%20right??),%20which%20had%20a%20trick%20to%20making%20it%20super%20moist.%20The%20trick%20was%20drenching%20the%20cake%20in%20cream%20and%20then%20putting%20it%20to%20bake%20in%20the%20oven.%20The%20thing%20with%20eggless%20cakes%20is%20that%20they%20need%20that%20extra%20bit%20of%20something%20to%20keep%20them%20moist%20so%20I%20adapted%20this%20trick,%20pouring%20some%20milk%20on%20the%20nearly%20baked%20cake,%20and%20baking%20it%20for%2015%20more%20minutes.%20The%20steam%20produced%20by%20the%20extra%20milk%20and%20the%20milk%20absorbed%20into%20the%20cake,%20makes%20it%20really%20soft.%20So,%20all%20these%20things%20put%20together,%20this%20eggless%20apple%20cake%20with%20coconut%20sugar%20came%20about%20this%20afternoon,%20and%20I%20must%20say%20I%20am%20delighted%20with%20the%20results.%3C/p%3E%3Cp%3EIf%20you%20don't%20have%20access%20to%20coconut%20sugar,%20the%20recipe%20will%20turn%20out%20good%20with%20regular%20sugar%20or%20even%20brown%20sugar%20or%20powdered%20jaggery.%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3ESteps%3C/p%3E%3Cp%3EGrease%20and%20line%20a%209%20inch%20square%20baking%20tray.%3C/p%3E%3Cp%3EPeel%20and%20core%20the%20apples.%20Finely%20chop%20two%20of%20the%20apples,%20place%20in%20a%20bowl.%20Cover%20and%20keep%20aside.%20Chop%20the%20other%20apple%20into%20half%20and%20slice%20each%20half%20into%20thin%20slices%20and%20keep%20aside.%20Coat%20with%20lemon%20juice%20if%20required,%20to%20prevent%20browning.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20at%20180%20degrees%20celsius.%3C/p%3E%3Cp%3EAdd%20the%20apple%20cider%20vinegar%20to%201%20CUP%20milk%20and%20keep%20aside%20for%205%20mins.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20sieve%20the%20flours,%20cinnamon,%20ginger,%20baking%20powder%20and%20keep%20aside.%3C/p%3E%3Cp%3EIn%20another%20large%20bowl,%20whisk%20well%20the%20coconut%20sugar,%20milk%20with%20apple%20cider%20vinegar,%20oil,%20vanilla%20extract,%20until%20well%20combined.%3C/p%3E%3Cp%3ETo%20the%20wet%20ingredients,%20add%20the%20dry%20ingredients,%20stir%20until%20combined.%20Do%20not%20over%20mix.%20Towards%20the%20end,%20add%20the%20finely%20chopped%20apples%20and%20mix%20to%20combine.%20Add%202%20tbsp%20of%20milk%20if%20if%20you%20feel%20that%20the%20batter%20is%20too%20thick.%3C/p%3E%3Cp%3EScrape%20this%20cake%20batter%20into%20the%20prepared%20baking%20tin.%3C/p%3E%3Cp%3EPlace%20the%20sliced%20apples%20on%20top%20in%20a%20single%20layer,%20decorating%20in%20anyway%20you%20like.%3C/p%3E%3Cp%3ESprinkle%20with%202%20tbsp%20granulated%20sugar%20and%20keep%20in%20a%20centered%20rack%20to%20bake%20in%20the%20preheated%20oven%20for%2045%20minutes.%3C/p%3E%3Cp%3EAfter%2030%20min
