%20Good%20times.%3C/p%3E%3Cp%3EIf%20you've%20never%20tasted%20Hollandaise%20sauce,%20it's%20an%20emulsion%20of%20egg%20yolk%20and%20liquid%20butter,%3C/p%3E%3Cp%3Eusually%20seasoned%20with%20lemon%20juice,%20salt,%20and%20a%20little%20white%20pepper%20or%3C/p%3E%3Cp%3Ecayenne%20pepper.%20My%20oldest%20brother%20is%20a%20pro%20at%20making%20this%20the%20traditional%20way--%20clarifying%20the%20butter,%20and%20using%20a%20double-boiler%20to%20whisk%20the%20sauce%20to%20perfection.%20%20The%20risk%20is%20that%20the%20sauce%20might%20break.%20He%20has%20a%20solution%20for%20that,%20but%20it's%20something%20I%20didn't%20want%20to%20deal%20with.%20For%20that%20%20reason,%20I've%20avoided%20making%20my%20own%20hollandaise%20this%20way.%3C/p%3E%3Cp%3EThose%20packets%20of%20hollandaise%20sauce%20mix%20don't%20cut%20it,%20either.%20%20Awful.%20I%20don't%20recommend%20it.%3C/p%3E%3Cp%3EA%20few%20years%20ago,%20I%20tried%20making%20blender%20hollandaise%20sauce%20with%20my%20food%20processor.%20Dismal%20Fail.%20I%20abandoned%20that%20idea%20until%20now.%20%20I%20finally%20upgraded%20my%20kitchen%20with%20a%20Vitamix%20Blender.%3C/p%3E%3Cp%3EAt%20first,%20my%20husband's%20eyes%20widened%20at%20the%20price%20tag--%20and%20I%20admit,%20I%3C/p%3E%3Cp%3Ehad%20to%20take%20a%20deep%20breath%20when%20I%20bought%20it.%20%20I%20don't%20regret%20the%3C/p%3E%3Cp%3Einvestment,%20because%20it's%20more%20powerful%20than%20my%20old%20blender%20(that%20I%20gave%3C/p%3E%3Cp%3Eaway).%20%20I'm%20sure%20this%20recipe%20will%20work%20with%20any%20brand%20of%20blender,%3C/p%3E%3Cp%3Ethough.%20I'm%20dubious%20that%20a%20food%20processor%20would%20work%20as%20well,%20given%20my%20past%20experience.%20But%20if%3C/p%3E%3Cp%3Ethat's%20all%20you%20have...give%20it%20a%20try!%3C/p%3E%3Cp%3E(you%20can%20substitute%20smoked%20salmon%20or%20mushrooms%20and%20spinach).%3C/p%3E%3Cp%3ENOTE:%20I%20freeze%20my%20egg%20whites%20to%20use%20for%20other%20recipes--%20like%20white%20cake%20or%20making%20a%20Pavlova.%3C/p%3E%3Cp%3EFor%20the%20sauce%20Mis%20En%20Place%20(fancy%20word%20for%20preparation%20or%20%22mess%20in%20place%22)%20measure%201-2%20Tbsp.%20fresh%20lemon%20juice,%20pinch%20of%20salt%20and%20cayenne%20(or%20white%20pepper)%20and%20one%20stick%20of%20butter.%20%20WARNING:%20This%20is%20not%20the%20time%20to%20be%20calorie%20conscious,%20by%20substituting%20fake%20butter%20or%20margarine.%20%20It%20won't%20work!%20On%20the%20stove%20top,%20or%20microwave,%20melt%20the%20butter%20and%20remove%20from%20heat.%20%20Do%20this%20right%20before%20making%20the%20sauce,%20so%20it%20doesn't%20cool.%20You%20don't%20have%20to%20clarify%20the%20butter,%20which%20makes%20this%20quick%20and%20easy.%3C/p%3E%3Cp%3EEggs%20Benedict%20doesn't%20take%20a%20lot%20of%20time%20to%20prepare.%20I%20didn't%20photograph%20how%20I%20poached%20the%20eggs,%20but%20you%20can%20find%20plenty%20of%20videos%20on%20how%20to%20do%20it.%20%20I%20add%20a%20splash%20of%20white%20vinegar%20to%20the%20poaching%20liquid%20(water),which%20helps%20to%20reduce%20the%20%22feathering%22%20of%20the%20egg%20white.%20While%20the%20eggs%20are%20poaching,%20I%20made%20the%20Blender%20Hollandaise%20Sauce,%20which%20takes%20less%20than%20one%20minute%20to%20do.%3C/p%3E%3Cp%3ETo%20the%20room%20temperature%20egg%20yolks,%20I%20added%20the%20lemon%20juice%20(I%20used%202%20Tbsp.%20of%20lemon%20juice%20because%20I%20love%20the%20flavor%20to%20come%20through).%20I%20recommend%20that%20you%20reduce%20the%20lemon%20juice%20to%201%20Tbsp,%20the%20first%20time,%20taste%20the%20sauce%20and%20add%20more%20to%20your%20liking.%20%20Add%20the%20salt%20and%20cayenne%20pepper%20(or%20white%20pepper).%3C/p%3E%3Cp%3EWhile%20the%20blender%20is%20running,%20slowly%20drizzle%20the%20very%20hot%20(not%20boiling)%20butter%20into%20the%20egg%20mixture.%20This%20should%20take%20less%20than%20one%20minute.%3C/p%3E%3Cp%3EThe%20sauce%20is%20nice%20and%20thick--%20but%20it%20needs%20a%20few%20seconds%20more%20of%20blending,%20as%20you%20can%20see.%3C/p%3E%3Cp%3EYou%20can%20keep%20the%20sauce%20warm,%20by%20placing%20the%20blender%20container%20in%20a%20deep%20bowl,%20filled%20with%20warm%20water%20(not%20boiling).%20(%20Leftover%20sauce%20doesn't%20reheat%20well.%20At%20least,%20I%20haven't%20found%20a%20way%20to%20successfully%20do%20that.%20)%3C/p%3E%3Cp%3ESmother%20the%20poached%20eggs%20with%20the%20sauce.%20%20Serve%20immediately.%20NOTE:%20If%20runny%20eggs%20make%20you%20squeamish,%20you%20can%20always%20serve%20this%20sauce%20over%20roasted/steamed%20asparagus.%20Classic%20deliciousness!%3C/p%3E%3Cp%3ETASTING%20NOTES:%20%20What%20took%20me%20so%20long%20to%20try%20this%20technique?%20This%20totally%20works!%20The%20sauce%20was%20creamy,%20and%20I%20loved%20how%20the%20lemon%20juice%20flavor%20came%20through%20with%20every%20bite.%20I%20ate%20one%20eggs%20benedict,%20and%20my%20son%20ate%20three.%20He's%20the%20tall%20and%20skinny%20one,%20and%20I'm...%20well,%20let's%20just%20say%20that%20I%20indulge%20a%20bit,%20but%20t
