Superfood Salad
Going green... I have a small obsession with the whole raw food revolution. I have to learn more about it! At the same time I kind of don't get it. I need to do a raw food cooking class and learn more about how to do it.
In the meantime, I stalk people's blogs, etc... looking for recipes that turn me on. I recently found the Whole Life Nutrition Kitchen blog and fell in love with their collard wrap. I made my own version of the collard wrap and it was damn good.
This salad is one of the fillings for that wrap. I have found that it's also fantastic on its own and so so good for you. So much so that I'm giving it it's own post.
It has become a staple in our household because of it's simplicity and versatility. Recently it became best friends with a grilled vegetable sandwich. A perfect pair.
I especially love that you can make this salad and it lasts in the refrigerator for a few days. The heartiness of the greens you're using lends to making it ahead of time which is great for a busy family.
Need:
- 1 bunch kale, thinly sliced
- 1 bunch red chard, thinly sliced
- About 1 1/2 cups matchstick carrots (I buy the organic bagged kind)
- 1 bunch flat leaf parsley, chopped
- 1/2 cup fresh squeezed lemon juice
- 1/4 cup extra virgin olive oil
- 2 cloves garlic, smashed and diced
- 1 teaspoon plus a little more, sea salt
- 1/2 teaspoon fresh ground pepper
- Toppings:
- Pumpkin seeds
- Bean sprouts
- Brocolli sprouts
Do:
To prepare your superfood salad mix, combine kale, red chard, carrots and parsley in a bowl.
In a shakeable jar, combine lemon juice, olive oil, salt, pepper and garlic. Seal the jar and shake it until everything is incredibly combined. Once so, pour mixture over greens mix, toss well and set aside for at least 30 minutes at room temperature. The lemon juice will soften everything.
Note: you can re-toss every 10 minutes or so, to ensure the dressing continues to be evenly distributed.
Serve:
Top with your choice of goodies such as pumpkin seeds, bean sprouts (my fave) and/or brocolli sprouts. Pair it alongside a delicious sandwich or use it in the collard wrap.
