Happy Friday! This week’s Cocktail O’Clock installment comes from my friend, Kyra Bussanich, founder of 100% gluten-free Crave Bake Shop in Lake Oswego, Oregon. Kyra and I have spent a lot of time together lately. And that’s a very good thing because I love this girl. She is an immensely talented chef (a graduate of the esteemed Le Cordon Bleu Patisserie program), and fellow gluten-free foodie. Not only that, but she’s won Food Network’s Cupcake Wars (twice). A natural teacher who loves to share her knowledge, Kyra has taught me everything from different properties and uses of gluten-free flours, to how to correctly apply false eyelashes (a skill every girl should have, right?).

Her bake shop’s cinnamon rolls are legendary and she regularly serves up her winning cupcakes from Cupcake Wars. Happily my family and I are making a pilgrimage to the Northwest this summer, and I’m going to eat EVERYTHING she has in her shop (fair warning, Kyra…be ready). But if you can’t make it up to Oregon, she will ship her baked goods just about anywhere and she has a new line of gluten-free baking mixes that are out of this world! Beyond her professional accolades, of which there are many, Kyra is simply one of the nicest people around and part of my fabulous circle of gluten-free sisters.

Hot summer nights call for fun, flirty drinks–and nothing says flirty better than passionfruit. I got the inspiration for this drink from my favorite cupcake that we make at the shop, called the Surfer Boy. The flavors of coconut, lime and passionfruit mix to create a sweet sipper.

Because I’m not a big drinker, this is definitely more pretty than potent, but its delicious! If you are serving these to a crowd, you can quadruple the recipe and keep the pitcher in the fridge so it stays icy cold and refreshing.

Okay, this might be the best cocktail (and cupcake) name ever! It’s the perfect combination of sweet, tart and fruity and I can imagine myself sipping this while sitting on a warm beach…admiring the real surfer boys. Is it summer yet? Cheers!

This sweet, tart and fruity cocktail was created by Kyra Bussanich of Crave Bake Shop. Named after a favorite cupcake in her shop, this cocktail is sure to make you long for warm summer days spent on the beach. To serve a crowd, quadruple the recipe and keep it chilled in a pitcher in the refrigerator until ready to serve.

Rim the edges of two cocktail glasses with lime and dip the edges into a shallow plate of superfine sugar. Place the glasses in the freezer to chill while you mix the drinks.

In a cocktail shaker with ice combine the coconut milk, rum, passionfruit juice, simple syrup and lime juice. Shake well and strain into two icy cocktail glasses. Garnish with a lime zest twist.
