Bacon and Tomato Spaghetti

This is my very first Surprise Recipe Swap I am so excited to be participating and I was so excited for this month so I could find out who my assigned Secret Partner would be. I couldn't wait to visit their blog and pick out a recipe to make. This month I have been assigned to Learning the Ropes One Recipe at a Time which is an amazing blog with so many wonderful recipes! Erika's love for pasta is obvious in her many pasta recipes. Erika was a perfect match for me because I also love pasta and garlic:) I could eat pasta everyday! The recipe I selected is Bacon Tomato Spaghetti I selected this recipe for 2 reasons: 1. Bacon and 2. - Bacon and Tomato Spaghetti
- 1-lb. spaghetti (or other favorite pasta)
- cooked and drained
- 1-lb. bacon, chopped
- 1 medium onion, diced
- 1/4 t. crushed red pepper
- 3 T. minced garlic
- 1-28 oz. can diced tomatoes with juice
- 2 tomatoes, diced and seeded
- 1/4 cup balsamic vinaigrette
- 1 T. Italian seasoning
- 1/4 cup shredded Parmesan cheese
- 1/2 t. pepper
- 1/2 t. salt
1. Heat a large skillet over medium heat and saute' bacon until crispy, about 5 minutes.
2. Remove bacon and drain on paper towels.
3. Remove all but about 2 T. of bacon grease from pan.
4. Add onions and red pepper flakes to the skillet and cook until onions are translucent, about 7-10 minutes.
5. Add garlic and cook for about 2 minutes.
6. Add tomatoes, balsamic vinaigrette, salt, pepper, Italian seasoning, and bacon to the skillet and cook on low about 20 minutes to allow flavors to blend.
7. Toss with cooked spaghetti and shredded Parmesan cheese. Enjoy~
**This recipe was absolutely delicious!! I will definitely make this again! The only thing different that I would do is; I would use good quality, thick cut bacon or I would substitute sweet Italian sausage or turkey sausage for the bacon.**
