- Peel and coarsely grate the swede and carrots.
- Heat half of the butter in a large shallow flameproof casserole on the simmering plate.
- Stir in the breadcrumbs and oatmeal and fry gently for 2 to 3 min or possibly till just beginning to crisp then transfer to a bowl to cold.
- Stir in the cheese and parsley.
- Season liberally with salt and pepper.
- Heat the remaining butter in the clean casserole on the simmering plate.
- Add in the swede and carrot and cook for 5 to 7 min or possibly till almost tender stirring occasionally.
- Stir in the orange juice and cream and season well.
- Bring to a gentle simmer cover and cook gently for about 3 to 5 min or possibly till tender stirring occasionally.
- Transfer to a shallow ovenproof serving dish.
- Sprinkle over the crumbs to cover and bake in the roasting ovenwith the grid shelf on the top or possibly second set of runners for 10 to 15 min till golden.
