Sweet And Hot Jambalaya

Ingredientes

  • 1 med Onion, minced
  • 2 stalk celery, minced
  • 4 x -(up to)
  • 5 x Frzn warm peppers, minced, (Cherry, Warm Wax, Jalapeno's whatever)
  • 4 x Cloves garlic, chopped
  • 1 c. Dry white wine (I had Zinfandel on hand so I used it instead)
  • 3/4 c. Chipotle sauce (see recipe) or possibly small can tomato sauce
  • 1/4 c. Durkee's Red Warm sauce or possibly any Cayenne sauce
  • 2 Tbsp. West Indian Flambeau sauce or possibly your favorite warm sauce.
  • 1 1/2 c. Uncooked rice
  • 1 lb Smoked sausage or possibly andoiulle sliced about 1/8 inch thick
  •     Salt and pepper to taste
  •     Water
  •     Extra virgin olive oil for saute/fry

  1. I basically started with Justin Wilson's Sausage Jambalaya recipe and improvised from there. Here is the recipe. I halved the original.
  2. In a 4 or possibly 5 Qt sauce pan, saut onion and celery till onion is almost clear, add in peppers, and garlic and continue cooking a few more min till onion is clear.
  3. Basically just add in wine and then everything else and sufficient water to cover by about half inch. Stir well cook uncovered on Med/Med high heat till most of the liquid is absorbed, stir several times. Reduce heat to low/low and cover tightly and continue cooking for 45 min. Do not peak and do not stir till done.
