According to Wikipedia typical quesadillas are made from corn or flour tortillas stuffed with cheese, a savory mixture or vegetables. If you have ever searched online for a quesadilla recipe, you know there are a lot of variations to choose from. And I am adding one more to the mix. . . this recipe came together one day when I was looking for something quick for lunch and I only had a few things left in my refrigerator.
These quesadillas are filled with healthy ingredients like sprouted grain tortillas, homemade sauerkraut, sliced apples and a sprinkle of extra sharp cheddar cheese. The perfect balance of sweet, savory and tart.
The extra sharp cheese adds a big bold flavor so you don’t have to use a lot of it. Sweet and sour quesadillas are perfect for a quick-lunch or and appetizer. Serve them on game day with a side of your favorite mustard for dipping.
