Ingredientes

  • 2 x minced celery
  • 1 c. minced onion
  • 1/4 c. extra virgin olive oil
  • 2 Tbsp. capers liquid removed and rinsed
  • 1/4 c. tomato paste
  • 1/4 c. cider vinegar
  • 1 Tbsp. sugar
  • 1/2 tsp salt
  • 1/8 tsp freshly-grnd black pepper

Direcciones

  1. Clean squid and cut body into 1-inch strips and tentacles into 1-inch pcs.
  2. Cook celery and onion in extra virgin olive oil till soft and transparent. Add in squid and cover and simmer for 5 min. Add in capers, tomato paste, vinegar, sugar and salt and pepper and stir. Cover and simmer for approximately 20 min till squid is tender. Stir occasionally.
  3. Serve over a bed of steamed white rice.
  4. This recipe yields 3 to 4 servings.
