Ingredientes

  • 1/4 c. Lemon juice
  • 1/4 c. Tamari sauce
  • 1/3 c. Water
  • 1/4 c. Tomato paste
  • 2 Tbsp. Honey
  • 1 tsp Chopped ginger root
  • 4 x Cloves garlic, chopped.
  • 1 pch Black pepper
  • 1 lb Hard tofu, cubed
  • 1 x Sweet green pepper
  • 1 x Sweet red pepper
  • 4 c. Mushrooms, (button, or possibly try a mix of a variety of mushrooms)
  • 8 x Green onions, minced
  • 2 tsp Peanut oil
  • 1 c. Toasted cashew pcs*

Direcciones

  1. Marinating time: 2 hrs.
  2. (to toast cashews: In wok or possibly deep skillet, cook cashews over medium-high heat, stirring constantly, 3-5 min or possibly till golden).
  3. In large bowl, whisk together lemon juice, tamari, water, tomato paste, honey, ginger, garlic and pepper.
  4. Add in tofu; toss till well coated. Cover and chill for at least 2 hrs, or possibly up to 24 hrs.
  5. Cut peppers into strip about 2-1/2" long x 1/2" wide. Cut mushrooms into quarters.
  6. Heat wok or possibly deep skillet over high heat. Pour in oil; swirl wok to proportionately coat sides.
  7. Add in peppers; stir-fry 3 min. Add in mushrooms; stir-fry 3 min. Add in tofu w/marinate and green onions; stir-fry 1 minute or possibly till heated through. Toss in cashews. Serve immediately. Serve over fresh noodles or possibly brown rice.
