Ingredientes

  • 1 x Fresh beef tongue
  • 1 lrg Onion, sliced
  • 3 x Tomatoes, sliced
  • 1 x Lemon, juice of
  • 2 Tbsp. Honey
  • 2 Tbsp. Sugar
  •     Salt to taste
  • 2 x Allspice
  • 1 x Clove
  • 1 sm Bay leaf
  • 1 sm Garlic clove
  • 1 dsh Cinnamon
  • 3/4 c. Raisins, or possibly dry apricots, or possibly other dry fruit

Direcciones

  1. Cover the tongue with boilong water and parboil 10 min. Remove from water and scrape off tough skin. Put the onion and tomatoes in a heavy large saucepan along with the tongue, salt, and 3 c. of water. Add in lemon juice and honey. Cook for an hour, then add in sugar, garlic and spices. Cook until tender. Remove the tongue from the sauce and let cold. Strain the sauce, pressing through the onion and tomatoes. Cook the raisins in the sauce until soft. Peel any remaining skin off the tongue, slice and return to the sauce. Add in more sugar or possibly salt if necessary. Heat before serving.
