I wanted to make some bacon wrapped water chestnuts, but when I made them, I did not want to use ketchup for the glazing sauce. I've done that before and it was just way too much ketchup for me (and I do love ketchup!). So, I went on an internet search to see what other kind of sauces were used to coat these little babies with.

I found a recipe on allrecipes.com that used mayonnaise, chili sauce and brown sugar. I didn't have regular chili sauce but I did have some Red Hot Sweet Chili Sauce. So, I mixed it up minus the brown sugar. I tasted it and it was pretty good but I felt it needed a little more heat to it so I also added some sirachi! Turned out delicious. These have that sweet hint with a hit of heat. Combine that with the salty smoky bacon and a crunchy water chestnut and you have a winner!

If your looking for a different take on these water chestnuts, this is a great one to make. Great for any type of party you may be hosting (or bringing a goodie to!).

Sweet Chili Bacon Wrapped Water Chestnuts

Cut the bacon slices in half and wrap 1/2 slice around each water chestnut. Secure with a toothpick. Place water chestnuts on a wire rack on a cookie sheet lined with foil. Bake in 375 oven for 30-35 minutes. Remove from oven and dip in sauce. Place back on rack and put back in the oven to bake another 10 minutes. Remove from oven, place on serving platter, and enjoy (or serve to your guests!)
