Ingredientes

  • 8 ounce Garlic -- chopped
  • 1 1/2 lb Chicken breasts, grilled
  • 5 1/2 Tbsp. Extra virgin olive oil
  •     Skinned -- boned and diced
  • 1 1/2 lb Shiitake mushrooms --
  •     Sliced
  • 16 ounce Bow tie noodles -- cooked
  • 2 c. Fresh plum tomatoes --
  •     Diced
  •     Rinsed and liquid removed
  • 1 c. Minced green onions
  • 4 ounce Cilantro -- minced and
  • 1 tsp Crushed red pepper
  •     Divided
  • 2 c. Chicken broth

Direcciones

  1. Cook and stir garlic in warm oil in large skillet over medium high heat till lightly browned. Add in mushrooms, tomatoes, green onions and crushed red pepper. Cook and stir 2 min more. Add in broth; simmer mix to reduce slightly. Add in chicken, noodles and 1/2 of the cilantro; heat through. Garnish with remaining cilantro.
