Ingredientes

  • 2 Tbsp. Tamarind Paste
  • 2 Tbsp. Warm Water
  • 2 Tbsp. Packed Brown Sugar
  • 1 sm Chili Pepper, halved and seeded
  • 3 Tbsp. Roasted Unsalted Peanuts
  • 1 tsp Salt
  • 1/2 x Cucumber, halved lengthwise and sliced thin
  • 1 x Mango, cut into 1" cubes
  • 1/4 x Pineapple, cut into 1" cubes
  • 1 x Jicama, peeled and cut into 1" cubes
  • 1 x Asian pear, peeled and cut into 1" cubes

Direcciones

  1. Soak the tamarind in the warm water 30 min. Strain, discarding the pulp. Put the tamarind liquid into a food processor along with the sugar, chili, peanuts, and salt. Process 30 seconds, stopping to scrape down the sides of the bowl as necessary.
  2. In a large bowl toss together the cucumber, mango, pineapple, jicama, and Asian pear. Add in the dressing and mix well just before serving.
