Sweet Onion Brown Sugar Cake

Ingredientes

  • 2 c. Light brown sugar, firmly packed
  • 2 1/2 c. Flour
  • 2 tsp Baking pwdr
  • 4 Tbsp. Butter
  • 1 tsp Salt
  • 1/4 c. Shortening
  • 3 x Large eggs
  • 2 1/2 c. Minced sweet onions
  • 1 c. Lowfat sour cream
  • 4 Tbsp. Butter
  • 1/2 tsp Baking soda

Direcciones

  1. Peel, wash, and chop onions. In skillet, heat 4 Tbsp. of butter, saute/fry minced onions till lightly crispy, don't brown.
  2. Heat oven to 350 degrees. Grease and flour a 13 x 9 x 2 inch pan.
  3. Sift together flour, baking pwdr, and salt in large bowl. Cream sugar, 4 Tbsp. of butter, 1/4 c. shortening till fluffy.
  4. Add in Large eggs slowly. Put 1/2 tsp. soda in lowfat sour cream, and add in to cream mix. Beat for 1 minute. Slowly add in dry ingredients.
  5. Beat for 3 min. Stir in sauteed onions. Mix well. Pour into greased pan. Bake 35 min in 350 degree oven. Drizzle melted butter over the top. Eat plain or possibly frost with creamed icing.
