Sweet Potato And Peanut Bhajis

Ingredientes

  • 2 med sweet potatoes finely sliced then sliced into matchsticks
  • 1 lrg red onion halved lengthways and sliced lengthways around the core into fine petal shapes
  •     good handful fresh coriander leaves good handful mint leaves
  • 3 x cm root ginger grated
  • 1 clv garlic crushed
  • 1 sm red chilli very finely minced
  • 1 tsp sugar
  • 1 x salt to taste
  • 50 gm flour
  • 40 gm peanuts toasted in a dry pan and crushed to crumbs
  •     vegetable oil for frying
  •     thai chilli dipping sauce to serve

Direcciones

  1. Mix together all the bhaji ingredients and toss in the flour and grnd peanuts then add in about 90ml of water so which everything is coated in a thick batter.
  2. When ready to serve heat the oil and deep fry handfuls of the mix in small batches till golden brown.
  3. Eat immediately letting everyone get a dunk in the dipping sauce.
  4. The vegetable mix can be made up hrs ahead just add in the water before blast off.
