- Drizzle 1 tablespoon olive oil on bottom of flat cookie sheet. Preheat oven to 400 degrees.
- Pre-cut potatoes save time, however they are fresher when self prepared. Use a potato peeler to peel the potatoes and cut into pieces about 3 inches long and ¾ inches thick.
- Grind cinnamon, oregano and coriander with a spice grinder. In a large bowl, mix cut potatoes with seasoning. Add as much as you want, depending on the flavor you want. Add a teaspoon of oil and tablespoon water to help blend the seasoning and potatoes.
- Place potatoes on cookie sheet, drizzle another tablespoon olive oil on top and bake for 20 minutes. Remove from oven, turn and bake for another 5 minutes or until brown on top. For a crispy touch, place under broiler for approx 3minutes or until brown and crispy. When done, remove potatoes from oil and let them cool on a plate over paper towels.
