...I%20just%20had%20three%20eggs.%20While%20I%20could%20have%20had%20plain%20scrambled%20or%20fried%20eggs,%20I%20decided%20to%20get%20creative%20and%20combine%20them%20with%20my%20last%20lonely%20sweet%20potato%20to%20make...something.%20When%20I%20started%20grating%20the%20sweet%20potato,%20I%20didn't%20quite%20have%20a%20recipe%20in%20mind.%20Sweet%20potato%20latkes?%20Sweet%20potato%20pancakes?%20I%20added%20all%20three%20eggs%20because%20the%20sweet%20potato%20soaked%20up%20the%20first%20and%20second%20one,%20but%20the%20third%20one%20made%20the%20mixture%20soupy...so%20I%20countered%20it%20with%20almond%20flour.%20I%20had%20to%20season%20them%20up...but%20I%20was%20out%20of%20cinnamon.%20So%20I%20used%20good%20old%20pumpkin%20pie%20spice...which%20is%20better%20because%20it's%20five%20spices%20all%20in%20one!%20Finally%20I%20seasoned%20with%20a%20tiny%20pinch%20of%20salt%20because%20salt%20brings%20out%20sweetness,%20surprisingly%20enough,%20and%20we%20were%20off%20to%20the%20hot%20skillet%20of%20coconut%20oil%20(which%20I%20am%20also%20almost%20out%20of!).%20As%20I%20cooked%20these%20guys,%20I%20realized%20they%20weren't%20like%20pancakes%20because%20they%20weren't%20doughy%20or%20fluffy%20(by%20both%20Paleo%20and%20non-Paleo%20standards)...they%20were%20so%20crispy%20on%20the%20outside!%20Then%20I%20knew%20the%20perfect%20word%20to%20describe%20these%20guys...fritters!%20I%20ate%20them%20with%20maple%20syrup%20and%20half%20an%20orange.%20I%20would%20have%20rather%20had%20bacon,%20but%20the%20orange%20made%20a%20nice%20accompaniment.%20It%20was%20a%20cara%20cara%20orange%20too,%20the%20most%20delicious%20oranges%20ever!%3C/p%3E%3Cp%3ESweet%20Potato%20Fritters%3C/p%3E%3Cp%3E1.%20Mix%20the%20sweet%20potato,%20eggs,%20almond%20flour,%20pumpkin%20pie%20spice,%20and%20salt%20in%20a%20medium%20bowl.%3C/p%3E%3Cp%3E2.%20Meanwhile,%20heat%20a%20large%20skillet%20over%20medium%20heat.%3C/p%3E%3Cp%3E3.%20Melt%201%20tbsp%20of%20the%20oil%20in%20the%20pan.%3C/p%3E%3Cp%3E4.%20Add%20five%20scant%20quarter%20cupfuls%20of%20fritter%20mixture%20to%20the%20pan,%20pressing%20each%20down%20lightly%20until%20it%20is%20about%201/8-to-1/4-inch%20thick.%20When%20the%20edges%20and%20bottoms%20of%20each%20fritter%20become%20brown,%20flip%20over%20and%20brown%20on%20the%20second%20side.%3C/p%3E%3Cp%3E5.%20Remove%20the%20first%20batch%20from%20the%20pan%20and%20move%20to%20a%20warm%20plate%20or%20a%20baking%20tray%20that%20is%20in%20a%20warm%20oven.%20Melt%20the%20second%20tbsp%20of%20oil%20and%20add%20five%20more%20fritters,%20using%20the%20same%20methods%20as%20before.%3C/p%3E%3Cp%3E6.%20Serve%20fritters%20warm,%20with%20maple%20syrup,%20if%20desired.%3C/p%3E%3Cp%3EFor%201%20fritter:%3C/p%3E%3Cp%3ECalories:%20114.9%3C/p%3E%3Cp%3EFat:%208.8%20g%3C/p%3E%3Cp%3ESaturated%20fat:%203.1%20g%3C/p%3E%3Cp%3ECholesterol:%2055.5%20mg%3C/p%3E%3Cp%3ESodium:%2043%20mg%3C/p%3E%3Cp%3ECarbohydrate:%205.2%20g%3C/p%3E%3Cp%3EFiber:%201.5%20g%3C/p%3E%3Cp%3ESugars:%201.8%20g%3C/p%3E%3Cp%3EProtein:%204.3%20g%3C/p%3E){kind=link}
