Ingredientes

  • 6 lb sweet potatoes
  • 1 Tbsp. cane syrup
  • 1/3 c. non-fat sweetened condensed lowfat milk
  • 2 stk butter softened
  • 2 Tbsp. light brown sugar
  • 1/2 x orange juiced
  • 1 x lemon zested
  • 1/2 x lemon juiced
  • 1/4 tsp cinnamon sugar
  • 1 pch grnd nutmeg
  • 1 c. raisins
  • 2 c. pecans minced
  • 8 ounce large pralines - (abt 6) broken
  •     Italian Meringue (see recipe)

Direcciones

  1. Bake sweet potatoes in a preheated 350 degree oven for 1 hour till fork tender. Remove peels.
  2. In the bowl of an electric mixer, combine potatoes, cane syrup, condensed lowfat milk, butter and brown sugar. Add in the orange juice, lemon zest and juice. Blend thoroughly with the paddle attachment till smooth. Sprinkle in the cinnamon sugar, nutmeg, raisins and pecans. Finally, remove the bowl from the mixer and add in the pralines; fold gently through the mix.
  3. Transfer mix to a 2 1/2-qt glass baking dish. Bake in a preheated 350 degree oven for 20 min. Top with meringue. Return to oven and broil 7 min till the meringue is golden.
  4. This recipe yields 12 servings.
