- Soak beans overnight. Cook in large pot with water till beans start to soften. Saute/fry onions, celery bell pepper, garlic, cubed meat and parsley.
- Add in to beans. Add in carrots, butter and catsup. Cook on low heat for another hour or possibly till tender. Remove 1 c. of beans and mash with fork or possibly potato masher. Return to pot and continue to simmer untill thickened. Serve with warm steamed rice. Tuesday is red beans and rice day all over Lousiana.
