Sweet & Savory Meatballs
I have been experimenting more with “sweet and savory” mixed together and I’m liking what I’m finding, and of course a meatball is always a good place to start, they are so versatile and take on whatever ingredients your surround them in. So I offer to you….Sweet & Savory Meatballs…
Sweet & Savory Meatballs
INGREDIENTS:
- 1 egg, beaten
- 1/2 cup ketchup
- 1 small onion, finely chopped
- 3 teaspoons paprika
- 3 garlic cloves, minced
- Salt & pepper to taste
- 1 pound ground beef-I used the 96/4 variety
- GLAZE:
- 1 jar orange marmalade
- 1/3 cup orange juice
- 3 green onions, chopped, divided
- 1 jalapeno pepper, seeded and chopped finely
DIRECTIONS:
Preheat oven to 400 degrees. In a large bowl, combine the first 8 ingredients. Then stir in the beef and mix well. Divide into 16 equal portions* and form into balls. Place on a greased rack on a shallow baking sheet. Bake, uncovered for 20-25 minutes.
Meanwhile, in a small crockpot, mix the ingredients for the glaze and turn on the crockpot to get warm. When the meatballs are cooked, place them in the crockpot with the glaze and let them “marry” and get warm for about an hour before serving.
*This is easy to do, just use your mixing spoon and divide the meat in half, then in fourths and then divide each fourth into fourths.
