- 1 1-pound pork tenderloin, trimmed of fat and cut into 2″ pieces
- 1 1/2 cups chicken broth
- 1 cup plus 2 tablespoons orange juice, divided
- 1 teaspoon honey
- Juice of 1 lime
- 1/2 teaspoon kosher salt, plus more to taste
- Freshly ground black pepper to taste
- 1 cup shredded or shaved carrot
- 1 cup peeled, thinly sliced jicama
- 1/4 cup chopped cilantro
- 8 6″ corn tortillas, warmed
- 2 limes, each cut into quarters
