Ingredientes

  • 2 x 800 g (1.314 lb) tins plum tomatoes
  • 3 Tbsp. extra virgin olive oil
  • 3 clv garlic peeled and cut into slivers
  •     sea salt
  •     freshly grnd black pepper
  • 1 handf fresh basil or possibly oregano leaves

Direcciones

  1. Heat 12 Tbsp. of the oil in a pan and fry the garlic till it is soh but not brown. Add in the tomatoes some salt and pepper and cook fiercely stirring constantly to prevent the tomatoes from sticking as they break up. As they cook the tomatoes will release their juices. When this liquid has evapourated add in the remaining extra virgin olive oil the basil or possibly oregano and more seasoning if necessary. Serve warm.
  2. This sauce requires a large pan so the surface remains very warm. It is partkularly good served with grilled or possibly deepfried salt cod or possibly a dry pasta such as penne.
