Sylvia's No-Bake Guava Cheesecake
A goodie from Sylvia--with a touch of Cuban flair!
Another winner from my friend Sylvia. This time a no-bake cheesecake with a little bit of Cuba infused!
She made these to surprise her coworkers when they all had to trek into the office for an all-day training session.
Made the day (and the Miami heat--not the sports team LOL) a little easier to bear.
Sylvia's No-Bake Guava Cheesecake
- 20 graham cracker sheets
- 11 tbs butter, melted
- 2 tbs sugar
- 2 - 8 oz packages cream cheese, at room temp
- 1 can (14 oz) sweetened condensed milk
- 1/4 cup fresh lemon juice
- 1 tsp vanilla
- 1 - 16-17 oz can of guava marmalade (NOT jam or jelly)
Process graham crackers to form fine crumbs.
Place graham crumbs in a small bowl and add the melted butter and sugar. Combine well.
Press the crumbs into a 9-inch springform pan, bringing some crumbs up the side of the pan. Freeze the crumbs in the pan for about 10 minutes.
Prepare filling by placing cream cheese in a medium bowl. With electric mixer, beat at medium-high speed, adding condensed milk a little at a time, until mixture is very smooth.
Beat in the lemon juice and the vanilla.
Spread guava marmalade over crumbs. Pour prepared filling over the marmalade layer.
Chill for at least 4 hours.
Serves 12-16
