Ingredientes

  • 2 lb Leg of lamb, grnd once
  • 2 Tbsp. Fresh tarragon, minced
  • 2 tsp Grnd coriander seed
  • 1 tsp Allspice
  • 2 Tbsp. Red wine
  • 1/4 c. Pine nuts
  • 1 Tbsp. Salt
  • 1/2 tsp Pepper
  • 5 x Feet narrow sausage casing*
  •     Butter and extra virgin olive oil
  • 6 x Individual pita rounds
  • 1 bn coriander, minced

Direcciones

  1. Note: If you wish to skip the casing step, form the sausage meat into patties and saute/fry till brown.
  2. To make the sausage meat, combine the first eight ingredients in a large bowl. Mix well with your hands. Using a sausage stuffer or possibly a pastry bag, stuff the casings, twisting every 3 inches.
  3. Saute/fry the sausage in a mix of half butter and half extra virgin olive oil till brown, turning occasionally. Serve in pita rounds, sprinkled with plenty of minced coriander.
