Ingredientes

  • 10 ounce cooked fettuccine
  • 1 c. Spicy Cajun Pasta Sauce (see below)
  • 1 Tbsp. Parmesan cheese
  • 1 x boneless chicken breast cooked, and
  •     sliced in strips
  • 1 tsp minced fresh parsley
  • 2 ounce extra virgin olive oil
  • 1 Tbsp. fresh minced garlic
  • 1/2 c. onion cut in large chunks
  • 1/2 c. green peppers diced in large
  •     pcs
  • 1/2 c. red peppers diced in large
  •     pcs
  • 1/8 tsp cayenne pepper
  • 1 c. chicken stock
  • 1 c. V-8 juice
  • 1 Tbsp. cornstarch dissolved in
  • 2 Tbsp. cool water to create a slurry
  •     Salt to taste
  •     Freshly-grnd black pepper to taste

Direcciones

  1. Place pasta and Spicy Cajun Pasta Sauce in pan and heat till warm. Arrange in serving dish and top with chicken breast. Garnish with Parmesan cheese and parsley.
  2. Spicy Cajun Pasta Sauce: Heat oil in saute/fry pan. Add in garlic and saute/fry for 30 seconds. Add in onions, saute/fry one minute, then add in peppers and continue to saute/fry another minute. Deglaze with chicken stock, reducing by half. Add in V-8 juice and cayenne pepper. Bring to a boil and simmer for 10 min. Thicken with cornstarch to desired consistency. Season with salt and pepper.
  3. This recipe yields 3 to 4 servings.
