Ingredientes

  • 2 lbs. hamburger
  • 4 (11 ounce.) S & W cans kidney beans (save the juice)
  • 1 (15 ounce.) can tomato sauce
  • 6 lg. tomatoes, blanched, peeled and minced
  • 2 med. onions, minced
  • 1 jalapeno pepper, seeded and minced
  • 6 cloves garlic, minced
  • 1 each green and red bell peppers, seeded and minced
  • 2 lg. stalks celery, minced
  • 2 teaspoon cumin
  • 6 tbsp. chili pwdr
  • 1 teaspoon oregano
  • 1 teaspoon sugar
  • 1 tbsp. dry mustard
  • Salt and pepper to taste

Direcciones

  1. Brown and drain hamburger, brown on high heat till the meat crackles. Saute/fry all peppers, onion, celery, garlic till translucent/soft.
  2. Mix the remaining ingredients in a large pot and bring to boil. Reduce heat and simmer 2 hrs. Adjust seasonings if necessary and simmer 2 more hrs. Stir the pot often, this scorches easily. Up to 4 c. of water may be added if more broth is desired.
  3. This recipe makes 2 gallons and freezes well. It is a lot of work, but worth the effort for a "warm/tasty" chili. Serve with a robust garlic/cheese bread. Bueno Apetito!!
