Receta Tabbouleh
Ingredients
- 1 Cup Bulgur Wheat / Cracked Wheat
- 2 Medium sized Cucumbers (seedless preferred), diced
- 1 Medium sized Tomatoes, diced
- 1 stem Scallions, chopped (white and greens)
- 1/2 Cup Roasted peanuts and cashews (optional)
- For the Dressing
- 1 no Lime
- 2 garlic pods, minced
- Handful finely chopped parsley and cilantros,
- 1 Tbsp Olive Oil
Instructions
Boil two cups water in a saucepan and soak the wheat for half an hour until all the water has been absorbed. Drain the excess water and allow it to air dry.
Meanwhile whisk together the juice of lime, parsley, cilantro, garlic and olive oil in a bowl. Mix all the other ingredients in another bowl along with the wheat and pour the dressing over it. Season it with salt and pepper.
