%20while%20I%20had%20a%20chicken%20boiling%20on%20the%20stove%E2%80%A6so%3C/p%3E%3Cp%3Eit%20was%20time%20for%20them%20to%20go%20play%20together%20so%20I%20could%20spend%20some%20time%20in%20the%20kitchen.%3C/p%3E%3Cp%3EThe%20chicken%20had%20cooked%20completely%20and%20cooled%20so%20I%20started%3C/p%3E%3Cp%3Eout%20pulling%20that%20apart%20and%20dividing%20it%20into%204%20small%20containers%20to%20put%20in%20the%3C/p%3E%3Cp%3Efreezer%20along%20with%20a%20bag%20of%20the%20chicken%20breasts.%20Only%203%20containers%20will%20make%20it%3C/p%3E%3Cp%3Einto%20the%20freezer%20though%20since%20I%E2%80%99ll%20need%20one%20for%20the%20Taco%20Casserole.%3C/p%3E%3Cp%3EFirst%20thing%20to%20do%20is%20getting%202%20cups%20of%20rice%20into%20my%20rice%3C/p%3E%3Cp%3Ecooker%20with%20chicken%20broth%20(instead%20of%20water,%20it%20makes%20it%20tastier)%20and%20let%20that%3C/p%3E%3Cp%3Ego%E2%80%A6it%E2%80%99ll%20tell%20me%20when%20it%E2%80%99s%20done.%20%20I%20like%3C/p%3E%3Cp%3Ethat%20since%20I%E2%80%99m%20otherwise%20horrible%20at%20cooking%20rice.%20J%3C/p%3E%3Cp%3EWhile%20the%20rice%20is%20cooking,%20I%20drained%3C/p%3E%3Cp%3Eand%20rinsed%20(and%20then%20drained%20and%20rinsed%20again)%20two%20cans%20of%20cannellini%20beans.%20I%3C/p%3E%3Cp%3Eset%20my%20skillet%20over%20medium%20heat%20and%20poured%20in%20two%20cans%20of%20fire-roasted%20diced%3C/p%3E%3Cp%3Etomatoes.%20Then%20I%20added%20the%20beans%20and%20the%20chicken.%20Lastly,%20I%20added%202%20teaspoons%3C/p%3E%3Cp%3Eof%20my%20Caribbean%20Style%20Adobo%20seasoning%20(I%20found%20it%20at%20Savory%20&%20Spice%E2%80%A6I%E2%80%99ll%3C/p%3E%3Cp%3Ehave%20to%20do%20a%20post%20about%20this%20later%E2%80%A6.that%20place%20is%20awesome!)%20and%20stirred%20it%20all%3C/p%3E%3Cp%3Eup.%20You%20could%20also%20use%20a%20packet%20of%20taco%20seasoning%20like%20the%20original%20recipe%3C/p%3E%3Cp%3Ecalls%20for%20or%20throw%20your%20own%20taco%20spice%20mix%20into%20the%20pan.%20Let%20that%20simmer%20until%3C/p%3E%3Cp%3Eyour%20rice%20is%20done.%3C/p%3E%3Cp%3EWhile%20I%20was%20doing%20all%20this%20cooking%20in%20the%20kitchen,%20I%20was%20being%20treated%20to%20a%20fashion%20show.%20:)%3C/p%3E%3Cp%3EOkay,%20so%20here%E2%80%99s%20where%20things%20get%20a%20little%20%E2%80%9Cup%20in%20the%20air%E2%80%9D.%3C/p%3E%3Cp%3EThe%20original%20recipe%20calls%20for%20you%20to%20use%20two%209x13%20pans%20but%20since%20I%20didn%E2%80%99t%20have%3C/p%3E%3Cp%3Ethose,%20I%20was%20ready%20to%20use%20a%20glass%209x13%20dish%20(since%20I%20was%20going%20to%20go%20ahead%20and%3C/p%3E%3Cp%3Ebake%20this%20up%20tonight%20for%20dinner)%20and%20a%20smaller%20tin%20pan;%20I%20think%20it%20is%20about%3C/p%3E%3Cp%3E8x5.%20So%20I%20don%E2%80%99t%20recommend%20using%20two%209x13%20pans%E2%80%A6unless%20you%20have%20lots%20more%20rice%3C/p%3E%3Cp%3Eand%20such.%20I%20probably%20could%20have%20put%20this%20all%20in%20the%20large%20glass%20dish,%20but%20I%3C/p%3E%3Cp%3Ereally%20wanted%20something%20to%20put%20in%20the%20freezer%20for%20later.%3C/p%3E%3Cp%3EAnyway,%20I%20sprayed%20both%20pans%20down%20with%20nonstick%20cooking%3C/p%3E%3Cp%3Espray.%20I%20put%20about%20a%20quarter%20of%20the%20rice%20in%20the%20small%20pan%20and%20spread%20the%20rest%3C/p%3E%3Cp%3Eof%20the%20rice%20out%20in%20the%20large%20glass%20dish.%3C/p%3E%3Cp%3ENext,%20I%20put%20about%20a%20cup%20and%20a%20half%20of%3C/p%3E%3Cp%3Ethe%20tomato%20mixture%20over-top%20of%20the%20rice%20and%20spread%20it%20out%20a%20little%20more%20evenly.%3C/p%3E%3Cp%3EThen%20the%20remaining%20mixture%20got%20poured%20over%20the%20rice%20in%20the%20glass%20dish%20and%3C/p%3E%3Cp%3Espread%20out.%3C/p%3E%3Cp%3EBoth%20dishes%20got%20a%20nice%20covering%20of%20shredded%20cheddar%20cheese.%3C/p%3E%3Cp%3EThe%20glass%20dish%20went%20into%20the%20preheated%20oven%20at%20350%20degrees.%20I%E2%80%99d%20say%20let%20it%20cook%3C/p%3E%3Cp%3Eonly%20about%2035%20minutes.%20Mine%20went%20longer%20and%20some%20of%20the%20edges%20started%20drying%3C/p%3E%3Cp%3Eout%E2%80%A6which%20means%20some%20of%20the%20beans%20and%20rice%20was%20crunchy.%20So%20I%20think%2035%20minutes%3C/p%3E%3Cp%3Ewould%20be%20a%20good%20amount%20of%20time%20if%20you%20are%20baking%20it%20right%20after%20assembling%20it.%3C/p%3E%3Cp%3EOtherwise,%20cover%20your%20dish%20with%20some%20tin%20foil%20and%20label%20%E2%80%9CTaco%20Casserole%20%E2%80%93%20Thaw%20and%3C/p%3E%3Cp%3Ebake%20at%20350%20degrees%20for%201%20hour%E2%80%9D.%3C/p%3E%3Cp%3EWith%20dinner,%20I%20set%20out%20on%20the%20table%20chopped%20up%20lettuce,%20sour%3C/p%3E%3Cp%3Ecream,%20and%20sliced%20black%20olives.%20I%20would%20have%20set%20out%20green%20olives%20if%20we%20had%3C/p%3E%3Cp%3Eany.%20J%3C/p%3E%3Cp%3EAnd%20I%E2%80%99m%20gonna%20level%20with%20you%20%E2%80%93%20my%20kids%20didn%E2%80%99t%20go%20for%20this.%20At.%20All.%20Because,%3C/p%3E%3Cp%3Eaccording%20to%20my%20oldest,%20it%20had%20tomatoes%20and%20beans%20and%20chicken.%20(Yeah,%20if%20you%3C/p%3E%3Cp%3Eare%20going%20through%20the%20ingredients%20that%20is%20most%20of%20the%20dinner.%20Haha)%20
