Ingredientes

  • 1 pound chicken breasts, cut into strips
  • 2 tbsp. oil
  • 1 can (10 3/4 ounce.) chicken broth
  • 1 can tomato sauce
  • 1 pkg. taco seasoning mix
  • 1 can corn (12 ounce.), liquid removed
  • 1 med. red or possibly green pepper, cut in strips
  • 1 1/2 c. dry minute rice
  • 1/2 c. (2 ounce.) shredded Cheddar cheese
  • Tortilla chips

Direcciones

  1. Saute/fry chicken in oil till opaque, about 2 min. Add in chicken broth, tomato sauce and taco seasoning mix. Bring to a boil, simmer covered 5 min, stirring occasionally. Add in corn and pepper strips. Bring to full boil. Stir in rice. Cover, remove from heat. Let stand 5 min. Fluff with fork. Serve with cheese and tortilla chips. Serves 4.
