they%20reminded%20her%20of%20corn%20tortillas%20but%20I%20thought%20these%20tasted%20similar%20to%20eating%20a%20tamale%20because%20the%20crepe%20was%20tender%20and%20soft%20but%20whatever%20they%20taste%20like%20a%20tamale%20or%20a%20corn%20tortilla,%20this%20recipe%20is%20a%20winner.%20Your%20kids%20will%20gobble%20them%20up(mine%20did).%20If%20you%20want%20a%20new%20twist%20on%20an%20old%20classic%20give%20these%20babies%20a%20try.%20The%20crepes%20are%20easy%20and%20fast%20to%20make%20I%20promise.%20My%20little%20two%20year%20old%20helped%20me%20make%20and%20flip%20every%20single%20one%20of%20them!!%3C/p%3E%3Cp%3ETaco%20Enchiladas%20with%20Cornmeal%20Crepes%3C/p%3E%3Cp%3EMakes%20about%2016%20crepes:%3C/p%3E%3Cp%3EFor%20the%20Crepes:%20Combine%20all%20the%20crepe%20ingredients%20in%20a%20blender%20and%20blend%20until%20smooth.%20Spray%20a%2010%20inch%20skillet%20with%20cooking%20spray%20and%20heat%20over%20medium%20heat%20until%20the%20skillet%20is%20very%20hot.%20Give%20the%20crepe%20batter%20a%20quick%20stire%20.%20Measure%201/4%20cup%20of%20batter%20and%20pour%20into%20hot%20skillet,%20tilting%20the%20pan%20to%20coat%20the%20bottom%20evenly.%20The%20skillet%20should%20be%20hot%20enough%20that%20you%20should%20hear%20a%20sizzle%20when%20the%20batter%20hits%20the%20pan%20but%20not%20so%20hot%20that%20it%20burns%20the%20crepes,%20Cook%20for%2030%20seconds%20to%201%20minutes%20and%20then%20loosen%20the%20edges%20with%20a%20rubber%20spatula%20and%20flip.%20Cooking%20the%20other%20side%20for%2030%20seconds%20or%20so.%20Repeat%20with%20the%20remaining%20batter,%20giving%20the%20batter%20a%20quick%20stir%20in%20between%20each%20crepe.%20Stake%20the%20crepes%20on%20top%20of%20each%20other.%20The%20crepes%20can%20be%20made%202%20days%20in%20advance.%20Cool%20the%20crepes%20completely%20before%20storing%20them%20in%20the%20fridge%20in%20a%20ziploc%20bag%20or%20plastic%20wrap.%3C/p%3E%3Cp%3EFor%20the%20taco%20meat:%20brown%20the%20ground%20beef%20in%20a%20skillet.%20Drain%20the%20grease%20when%20no%20longer%20pink.%20Add%20in%20the%20onion,%20garlic,%20and%20jalapeno%20and%20cook%20until%20veggies%20are%20tender.%20Add%20in%20all%20the%20spices%20and%20cook%20for%20a%20minutes%20then%20add%20the%20tomato%20sauce%20and%20simmer%20for%2020%20minutes.%20Preheat%20the%20oven%20to%20375%20degrees.%20LIghtly%20coat%20a%209x13%20inch%20pan%20with%20cooking%20spray.%20Lay%20all%20the%20crepes%20flat%20and%20fill%20them%20with%201/4%20to%201/3%20cup%20of%20the%20taco%20meat,%20sprinkle%20with%20cheese,%20roll%20up%20and%20place%20in%20the%20pan%20seam%20side%20down.%20Repeat%20with%20all%20the%20crepes.%20Pour%201%20large%20can%20green%20enchilada%20sauce%20and%201%20regular%20can%20red%20enchilada%20sauce%20over%20the%20top%20and%20sprinkle%20with%20cheese.(or%20you%20can%20use%20one%20large%20red%20and%201%20regular%20green%20sauce)%20Bake%20for%2020-25%20minutes%20or%20until%20hot%20and%20bubbly.%20Serve%20with%20optional%20toppings%20if%20desired%20and%20rice%20and%20beans!!!%3C/p%3E%3Cp%3EAdapted%20from%20Mel's%20Kitchen%20Cafe%3C/p%3E){kind=link}
