I love the word Crudite - don’t you just love that word, pronounced (crud-dee-tay) ? What a nice sounding term for raw vegetables cut into bite sized pieces and served with a dipping sauce. The type of vegetables are endlesss. Not only are the vegetables unlimited so are the dipping sauces. In this recipe I decided to use a homemade Hummus. Garbanzos are one of my favorite beans and hummus is easy to make. Garbanzos are also high in protein, fiber, manganese and folate which all contribute to a heart healthy diet. I have gone with the basic hummus – tahini (sesame paste), lemon in place of the salt (gotta watch that high blood pressure) and lots of garlic.
