Tahitian Vanilla Creme Brulee

Ingredientes

  • 8 ounce half-and-half
  • 1 x Tahitian vanilla bean
  • 1/2 tsp vanilla extract
  • 8 x egg yolks
  • 1 whl egg
  • 5 ounce sugar
  • 24 ounce heavy cream
  • 1 c. fine sugar or possibly as needed

Direcciones

  1. Heat half-and-half with vanilla bean and extract. Whisk together yolks, egg and sugar. Pour a small amount of warm half-and-half into the egg mix to temper the Large eggs. Add in the remaining half-and-half. When cooled, add cream. Cold completely. Remove vanilla bean.
  2. Preheat oven to 325 degrees. Fill ramekins with mix and place in baking dish. Fill with warm water half way up, cover tightly with foil and bake for 35 min. Cold well. Sprinkle sugar over surface of creme. Place under broiler and broil till nicely browned and caramelized.
  3. This recipe yields 8 servings.
