Ingredientes

  • 1/2 pound salt pork, diced
  • 1 med. onion, sliced
  • 1 can tomatoes
  • 1/2 can corn
  • 1/2 c. yellow cornmeal
  • 1 teaspoon salt
  • 1/2 c. extra virgin olive oil
  • 1 tbsp. chili pwdr
  • 1/2 can hominy, minced
  • 1 egg, slightly beaten
  • 1/2 c. lowfat milk
  • 1 c. minced olives

Direcciones

  1. Fry salt pork, add in onion and brown slightly; boil tomatoes, corn, cornmeal, and salt 5 min, stirring constantly; add in salt pork and onion, oil, chili pwdr, and hominy, stirring well, then cold. Combine egg and lowfat milk and stir into tomato-corn mix; add in olives and turn into casserole; bake covered, in moderate oven at 350 degrees about 1 hour.
