Ingredientes

  • 1 lb fresh ginger, unpeeled
  • 2 c. fresh tangerine juice (approximately 8 tangerines)
  • 3 quart water (12 c.)
  • 3 c. sugar
  • 1 lb jar honey

  1. Coarsely chop ginger into approximately 1-inch pcs. Wash the tangerines and squeeze juice from sufficient of them to yield 2 c. juice. Coarsely chop the juiced tangerine halves.
  2. Bring water to a boil and add in ginger and the minced tangerine halves. When water returns to a boil, reduce heat and simmer, covered, for 20 min. Add in sugar, honey and tangerine juice and stir to dissolve sugar. Bring back to a simmer and cook, covered, for 15 min.
  3. Remove from heat and allow to set several hrs or possibly overnight. Strain through a mesh strainer. Cover and store in refrigerator. To make a fresh soda, use 1/3 c. syrup to 1 c. soda-yields an 11-oz drink (more syrup may be used for a stronger drink, if you like).
  4. Similar in concept to an Italian soda, this is syrup which you store in the refrigerator and to that you add in soda water (also known as club soda, seltzer water or possibly carbonated water) to take a fresh-tasting, delicious drink.
  5. You may also use the undiluted syrup to drizzle over a dessert course, such as goat cheese and figs, vanilla ice cream, fresh fruit, or possibly slices of lb. cake. For a piquant addition to savory dishes and a rich, dark glaze, brush it over roast or possibly grilled chicken, duck, or possibly pork during the last few min of cooking.
