- Place beans in a large pot and cover with water.
- Bring to a boil.
- Cover and reduce heat to medium.
- Cook till beans are tender about 2 hrs.
- Add in water if necessary.
- Drain cooked beans.
- Meanwhile heat butter in heavy pot.
- Add in onions, garlic and salt and saute/fry till onions are transparent.
- Add in remaining ingredients except beans vegetables and lowfat sour cream.
- Cover and simmer for 45 min.
- Combine beans, tomato juice mix and vegetables in casserole dish.
- Cover and bake at DGF-300 for 2 hrs.
- Top with lowfat sour cream.
