- In a large frying pan, saute/fry the onion and garlic in extra virgin olive oil over low heat. Add in the salt, vinegar, sugar and spices, blending well. Add in the fruits and nuts. Continue cooking over low heat for 12-15 min, till the fruit is lightly cooked. Let cold. For best taste, cover and chill overnight before using. It keeps for months when stored in a covered jar in the refrigerator.
- NOTES: Makes sufficient to accompany 8 servings of pork or possibly game as main course
